Red Curry Chicken Stir-Fry (keto friendly)

Instructions
- pour in the water into instant pot and add in the chicken bouillon
- cut up chicken into 3/4 inch cubes and add into instant pot and stir
- cook on high pressure for 5 min.
- dice up zucchini into 3/4in cubes spread out on cutting board and salt to draw out the water
- julienne onions and finely dice up jalapenos and garlic
- once pressure is build up and sealed on the instant pot, it is time to star cooking the veggies
- place 12in frying pan on burner on medium heat add 1tbsp of coconut oil
- blot dry the zucchini and add to frying pan. Cook for about 5min until zucchini is getting some color to it.
- instant pot should be done by now. manual release and dump chicken into strainer
- remove zucchini from pan
- add chicken into pan and cook for about 3 minutes until water is evaporated
- remove chicken from pan
- add in 2tbsp of coconut oil and cook onions and jalapenos
- once caramelized stir in fish sauce then remove from pan and set aside
- Add 1 tbsp of coconut oil to pan and put chicken back in the pan
- add in curry paste, garlic and cooking wine. Stir and cook for a few minutes.
- add back in all the veggies and stir
- squeeze in lime juice and add garlic salt. (stir)
- place on low add cover to pan and cook for 3 minutes
- remove cover, stir again and remove from heat source
- Enjoy! dish up and sprinkle peanuts on top and sesame seeds if you desire!
