Goat Cheese and Sausage Hotdish

  1. Instructions
    1. Cube zucchini, then spread out pieces on cutting board, Sprinkle salt on top, set aside (salt draws up excess liquid, this will cut down on cooking time)
    2. Brown sausage roll in your frying pan. Add optional spinach/and or mushroom powder for added nutrition
    3. While browning sausage, cut up bok choy into 1/4 inch ribbons, then cut ribbons in half the long way
    4. Just before sausage is done browning, blot excess water with a tea cloth from zucchini
    5. Remove sausage from pan (I set it in the serving dish to cut down on dishes)
    6. Add zucchini and bok choy to pan, keep on medium heat, stir in 1 tsp of garlic.
    7. Once veggies are 3/4 cooked, add tomatoes to pan
    8. Once veggies are cooked return sausage to pan, stir in cubed goat cheese.
    9. Let cook for 2-3 minutes, then serve.

Looking for a quick, veggie filled dinner. Look no further. This recipe is keto and is uses 2 of the most easy vegetables to cook with.

Cooking with Baby Bok Choy intimidated me at first, but it really is an easy vegetable to use-- simply wash it, and cut it up into ribbons and cook. You'll barely tell it's in your recipe, but make it more nutritious and filling. You can also sub in regular Bok Choy if you can't find Baby Bok Choy.

If you are into freeze-drying, I highly recommend making freeze dried spinach. I simply sprinkled a bunch on my sausage while it was cooking, and you also get in those added nutrients and color with very little effort. I add it in so many hot dishes.
